Greek Tabouleh

I found this recipe a while ago and tweeked it a bit. I've been told by others that this is the best tabouleh they've ever had :blush:

1c. bulgar wheat (usually found in the bulk section)
2 c. chicken broth
2 c. grape tomatoes cut in half
2c. English cucumber cut in forths and chopped with seeds removed
1/2 diced red onion
1c pitted Kalamata olives (optional - I think this makes it a bit too salty)
1 1/2 c crumbled feta (I like to use the lemon oregano seasoned)
1/3 c. finely chopped mint

Dressing:
1/4 c extra virgin olive oil
2 Tbsp red wine vinegar
juice of one fresh lemon or 2 Tbsp of bottled
Salt to taste

i like about 2 cloves of minced garlic in mine.... I have a garlic problem....
but I like the chicken broth idea, might make it a lil more tasty than just boiling water to soak the bulgar.

Well... I have a nice supply of Greek..( Paul's Greek)
so, how about some nice Italian pasta? Tomatoes and veggie??

Sure - I like to make this one -

1lb of fettuccini or linguini
1/4 cup extra virgin olive oil
1/3 c feta
1 c. halfed grape tomatoes
1/3 c. toasted pine nuts
sliced mushrooms

great... good stuff had it on my mind because someone (bam?) posted Moussaka(sp) today... this diner I used to go to had a greek combo where you got a piece of each + a spanikopita (sp) a greek salad.. mixed olives and baklava ... oh it was deadly but good.

Here you go - Pastitsio:

1 Tbsp olive oil
1 1/2 lbs ziti
3/4 c grated kefalotyri or parmesan cheese
2 - 2 1/2 c fresh tomato sauce
1 Tbsp orange zest
1tsp oregano
2 c of Besamel (white) sauce
2 eggs slightly beaten

Preheat oven to 350. Coat a 9x13 baking dish with oil. Boil ziti to package directions and drain. Add half of cooked ziti to pan, spinkle with cheese then layer tomato sauce. Sprinkle zest and oregano over the sauce. Distribute remaining ziti over the top.
In a mixing bowl, combine besemal and eggs, whisking until smooth. Spread over the top layer of ziti and top with remaining cheese. Bake until golden, approx 50-55 minutes. :mrgreen:

Silly me, I forgot the spinach and the garlic! Geez! *slaps forehead*

lol...getting copy out and writing in spinach and garlic! ( would have added garlic anyway...cuz that's the kind of girl I am!!)
