Buffalo Pig Wings

I've been hearing more and more about Pig Wings, so had to try them.

They were easy and excellent! The original recipe made way too much sauce, and was too spicy for us, so next time, i'll use 3/4 cup of Frank's to half a stick of butter.

I put the skewers on the bottom edge of the grill so that the wooden handles stuck out from under the lid.

Pig Wings, Buffalo

Ingredients
· 2 pork steaks
· 1 tsp. kosher salt
· 1/4 tsp. celery salt
· 1/4 tsp. garlic powder
· 1 cup Franks Hot Sauce (I would use ¾ cup)
· 3 tablespoons melted butter (I would use half a stick)
· 1 tsp. Worcestershire sauce
· Thick wooden skewers

Soak wooden skewers for several hours.
Mix salt, celery salt and garlic powder in a small bowl.
Mix Frank’s, butter and Worcestershire in another bowl.
Cut pork into pieces about the size of a chicken drummy.
Thread pork onto skewers. Sprinkle seasonings on both sides of meat.
Heat grill to medium heat. Grill meat for 4 minutes, then flip.
Brush each skewer with sauce. Grill 4 more minutes and flip again.
Brush with more sauce , grill for 2 minutes and flip.
Grill for one more minute.
Serve with rest of Buffalo sauce, blue cheese dressing, carrot and celery sticks.
