Bam's Spicy Apricot Chicken Wings

i have been on an apricot thing lately. have eaten about 4 lbs of dried turkish apricots in the last week..lol

1 jar apricot preserves
2 Scotch Bonnets - minced finely - seeds and pith removed if desire
spash or two of apple cider vinegar
3 cloves garlic - minced finely
1/2 small onion - minced finely
1 teaspoon olive oil or cooking spray
salt

in a small saucepan, sweat the onions & garlic in olive oil or cooking spray.

add the scotch bonnets - WARNING do not hold your face over the saucepan at this time, it will hurt.

next add the apricot preserves, splash of vinegar and cook for about 20 minutes,slow simmer.

deep fry chicken wings, when they are ready, season with some salt or cajun seasoning.

place 6-8 wings in a large bowl, add about 2 TBL of the sauce and slosh around until coated.

add more sauce if desired.

serve more sauce on the side
