Grillin with Horse Radish? Watcha got?

So across the river from st. Louis is a little town called Collinsville. Collinsville, IL, is the Horse Radish capital of the world. This weekend is the Horse Radish Festival. The wife wants to go and she wants me to use HR in some dish on the grill tomorrow night.

So I need some ideas. Keep in mind I am not a fan of HR. I like it in horsey sauce for my prime rib. My wife slathers her pot roast with it and it is stellar but you don't taste it as the horse radish cooks down throughout the day in the crockpot...

So I need some idears...

I missed this post, and it looks like it’s too late, but the thread will always be here, so here are some ideas for future reference.

How about:

1. Hamburger patties with HR mixed in.
2. Meatloaf with HR mixed in.
3. Smoked Oysters with an HR and Lemon Juice glaze.
4. Smoked Pork Loin with HR and Orange Marmalade glaze.
5. Grilled chops with HR and Orange Juice glaze.

No worries. SPent the day at a "celebrity" grill off in St. Louis... Never made it to the HR festival...
