I've seen those little pies Jimmy, and your dinner looks great.

It's been quite the eventful day here.
We got shredded chicken sandwiches, deep fried cheese curds and ice cream treats from Eric's.
I got the Carnival Sundae again with the funnel cake straws.
Ughh, it's staying with me. Lol

I made a full recipe of pasta dough, we rolled it out into sheets, then cut and used up the thawed frozen mix of ricotta, moz, parm, etc. cheese filling taking up room in the freezer to make manicotti. Craig made the sauce. Simple garden salad on the side. We were supposed to make garlic rolls too, but forgot thank goodness since I was stuffed with what we had. Now, we have 2 meals of manicotti in the freezer. Sigh, I'm not sure if we are making progress in cleaning out the freezers or not, but at least these are ready to pop into the oven meals.

We had macaroni and cheese with tuna.

Peeps, you inspired me to make spaghetti with Tuna!
My mom made it on Fridays ( Eat No Meat or Get your @$$ Beat )

In the cast iron pan.... olive oil and bread crumbs to cover, and keep
stirring till the bread crumbs are browning, then throw in some minced garlic ( one clove is enough ), and heat for a few minutes.
Throw in 2 cans of Tuna .... We always use the Genova Brand Tono in olive oil.
Don't drain the oil! Cook the spaghetti #9 and pour the tuna and crumb mixture onto the drained spaghetti.
Eat with fresh lemon wedges to squeeze as you eat!

Have plenty of water to drink at each setting. It's a little dry, but Oh So Good!
BTW..... Don't use flavored crumbs. Only plain bread crumbs.

I remember you saying you always use plain bread crumbs and you flavor yourself.
See...... Jimmy Never Forgot that!!!

ah yes, ye' olde' kitchen sink pasta of a pinch . . . (g)

lots and lots of really easy dishes along that line -

we like angel hair, or fett / linguini

toasted almond slices + toasted panko - minced brocc in oil sauce
sub
cauliflower
carrots&pearl onions
sweet peppers green/red/yellow

raft of mushrooms
tuna
any diced cured sausage
chipped beef
diced hot dogs
slash any diced left over pork/beef/chicken

on and on

red gravy with a ton of mushrooms - but fresh shrooms cooked down 60-90 minutes

it's a real good "base" for cleaning up left overs - no recipe past the basic sauce

Something with chicken hopefully.

I will be making refried beans in my Instant Pot (later or tomorrow) to use in Beef, Bean and Cheese Enchiladas.

I will also be making sesame noodles at some point to go with an Asian inspired meal.

Chicken salad sammies with red grapes, almonds, red onions, celery, and half mayo, half sour cream on a copycat recipe of The Outback Steakhouse bread. Sweet potato puffs on the side.

We visited Cajun country tonight. Last of the crawfish until next season, made into etouffe, used as a filling for hand pies that were deep fried. Side is Cajun potato salad. Hand pies aren't that pretty but by the time I got everything done, even with Craig helping, I just wanted to be done with it and put my feet up.
