Cheddar-Bleu Bruschetta

Cheddar-Bleu Bruschetta

1 large tomato
1/2 cup. bleu cheese crumbles
Dash parsley or to taste (dried will do)
2 TBL olive oil
garlic powder to taste
butter
1 loaf french bread (fresh)
1/2c. shredded cheddar
shredded mozzarella
salt and pepper

Cut the whole tomato in small cubes; place in a small medium bowl.
Add blue cheese crumbles, shredded cheddar, olive oil, parsley
salt and pepper to taste and mix well.
Slice French bread 1 inch thick, butter both sides and sprinkle garlic powder on both sides. Place on a grill with moderate heat (to toast)
It shouldn't stay on more than a few minutes keep a close eye on it so you make sure you don't burn the bread.
When Bread slices are toasted, remove from grilland top each slice with the topping mix, then sprinkle each slice liberally with mozzarella; suit your own taste as to the amount.
Place in Salamander, toaster oven, or under the broiler for less than a minute, just to get the cheese melting.
