I make this year round, it's so delicious and easy to make.
1 c shredded carrots
1 c diced celery
1 c diced onion
1/2 stick butter
1 t poultry seasoning
1/4 t pepper
1/2 t salt
8 c dry bread cubes
2 apples, peeled and finely chopped
1/2 c chopped walnuts
1 1/2 c vegetable broth
Preheat oven to 375
Melt butter in large skillet over medium heat.
Cook the carrots, celery and onion until tender, about 10 minutes.
Stir in poultry seasoning, pepper and salt.
In a bowl combine the bread cubes, apples and walnuts, then add the carrot mixture.
Add enough broth to moisten and toss lightly.
Transfer to a 2 quart casserole and cover.
Bake 20-30 minutes.
