Default Vorschmack

Vorschmack is an originally East European salty meat dish prepared mainly out of minced meat, anchovies or herring and onions. The dish is usually garnished with pickles and sour cream. Snaps is usually served in combination with eating Vorschmack.

There are several stories regarding the origin of the dish, but it has become a traditional Finnish dish as it was one of the favourite appetizers of the Finnish statesman, war hero and gourmand Marshall C.G.E. Mannerheim. Some sources say Mannerheim brought the dish to Finland from Poland, but there have not been any definite sources for this claim. A hot pot dish named "forszmak" (the same pronunciation) is however known in East Poland (Lublin region), usually made of chicken and cucumbers.

250 g (0.55 lb) lamb mince
1 to 2 tablespoons butter
400 g (0.88 lb) of ground beef
2 large onions
4 cloves of garlic
100 g (0.22 lb) of anchovy fillets
2 tablespoons anchovy stock
1/2 teaspoon freshly ground black pepper
2 tablespoons of tomato paste
1 dl (0.42 cup) of water

In addition:
about 150 g (0.33 lb) pickled beetroots
about 150 g (0.33 lb) pickled cucumbers
100 g (0.22 lb) sour cream

Fry the minced lamb fried in a frying pan. Transfer the meat into the pot with a lid. Brown the ground beef in a pan in its own fat.

Finely chop the onions and garlic cloves. Add them with meat. Continue cooking, stirring constantly, until the onions are softt. Combine minced meat into the pot and heat.

Finely chop the anchovy fillets on a cutting board and add into the pot. Pour in the slightly anchovy stock. Season with pepper and tomato paste and add water. Heat the stew to a boil, cover with a lid and lift to the oven.
Reduce the oven temperature to 150 degrees C / 300 degrees F 1 to 1
1/2 hours. Check the fluid level of the pot for about every 20 minutes and if needed add 1/4 cup of hot water.

Vorschmack needs to stay moist, but it should not be watery. Serve vorschmack with boiled potatoes, cubed beets, picklets and sour cream.
