2 eggs
red, yellow and green peppers, small (1 each)
1 small red onion
1/2-lbs. of desired meat (shrimp, chicken, pork, beef)
1 tablespoon olive oil
1 cup uncooked rice
2 cups water
1 stick butter
1 teaspoon soy sauce
1/4 teaspoon ground black pepper
1/4 teaspoon tarragon
1/4 teaspoon garlic paste
1 to 2 cups flour
1/2 gallon milk

Bring water to boil in sauce pan. Add rice to boiling water. Reduce heat cover and simmer 20 minutes. Do not remove lid during those 20 minutes. While rice is cooking, cut peppers and onions into strips. Cut meat into strips if necessary. Saute meat, with olive oil, until cooked; adding peppers and onions avout half way through. Melt butter in sauce pan. Add soy sauce, black pepper, terragon, and garlic. On medium to low heat add 1/2 cup at a time while stirring constantly with wire whisk, enough flour to create a thick paste. Make sure to beat out any lumps. Add milk slowly while stirring. Add a cup or two at a time until the consistency is that of gravy. Remove from heat. Whip eggs until lots of bubbles form. Use non stick spray or butter to cook eggs in a non stick frying pan. Don't overcook it, and flip it to cook on the other side. Let fluff a little but do not smash it down. to serve, drizzle sauce on a plate. Place egg patty over sauce. Place 1 cup of rice in center of the egg patty.

Drizzle a little more sauce over the patty and rice. Pour meat and vegetables over the rice and drizzle more sauce over that. garnish with fresh asparagus on top.

It DOES sound good! It almost sounds like a spiffed up egg-foo-yung. Do you have any pics???
