Rye Malt Bread

3 dl malt mash* See Note
2 dl butter milk
2 tsp salt
50 g fresh yeast
0,5 dl dark molasses (syrup)
4 dl rye flour
6 dl wheat flour
50 g butter

The malt mash you will get when you make a home made beer by rye malt.

Add to the mash hand warm buttermilk, yeast, salt and syrup. Knead the dough rye and wheat flour solid. Finally, add the soft butter.

Let the dough rise under the cloth doubled.

Bake two round loaves of bread. Let them rise, prick with a fork and bake +175 - 200 C, 1 hour.

You can also spice up the dough anise, fennel of bitter orange peel.

* Note: Malt mash (if you are not going to make home made beer): Put a bowl of 1,5 dl rye malt, pour 3 dl of boiling water. Cool 1 hour.

Well, I LOVE rye bread. Gotta think the malt mash only makes it all the better!
