green chile corn

-cob corn w/ kernals sliced from the cobs
-mild green chiles
-vidalia onion, diced
-garlic
-seasalt (use to make garlic into a paste)
-olive oil, a/n
-black pepper
-jack cheese, shredded
-raosted redpepper (follow above procedure for the chiles)

coat corn in the olive oil, season w/ salt & pepper; roast @ 375-400 till corn begins to brown at edges. meanwhile, roast chiles till blackened on range using tongs. put into a baggie, then after several minutes, peel. seed & cut into thin strips.
cook onion in a splash of olive oil till golden-brown, add garlic & cook a few minutes further.
combine ingredients, folding in chile last, adjust seasoning, & place into a baking dish. cover w/ cheese, garnish w/ the other peppers, & broil for a few minutes

That sounds good, luvs.

I make a cheat version of that using corn and Tostitos Salsa con Queso. Mix together and bake at 350 for 20-30 min. Everybody loves it and you can't beat the quick and easy method if you're in a time pinch. Two ingredients!
