HILLBILLY CHILI

--SPICES:--

8 tbsp. McCormick hot Mexican chili
powder
1 tbsp. celery salt
2 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. ground double-supreme mustard
1 tbsp. black pepper
2 tsp. cumin

--INGREDIENTS:--

1/2 stick real butter
3 1/2 lbs. tenderloin (1/4 inch cubed)
3 lg. cloves garlic
5 slices smoked bacon, minced
1 onion
2 fresh Jalapeno's, seeds and ribs removed, thinly sliced
peppers
1 tbsp. Tabasco sauce
1 tsp. hickory liquid smoke
8 oz. V-8 juice
12 oz. tomato paste
15 oz. can chicken broth
6 oz. Old El Paso hot salsa
1 ripe mashed banana

Brown meat in cast iron Dutch Oven with butter, onions and garlic;
Add remaining ingredients and simmer for at least 2 hours. Add extra chili powder, hot peppers, or garlic to taste.

Holy cow! 3 1/2 pounds tenderloin? If that's beef tenderloin that's a pretty expensive chili recipe! Bet it's tasty, though.

Our store sells tenderloin for $3.99/lb on sale, but still, I don't associate tenderloin with Hillbillies! LOL!

I'm with you. I fully expected to see fresh road killed possum or raccoon. God, it's been a long time since I've had some good road kill....

Naw; Hillbillies eat the same parts of the cow as you.............now those Ridge Runners............ they'll serve you road kill and not even try to hide the embarrassin' flavor of tarmac and tire tread..........
