I had this recipe for many years... it is very popular in Romania and it is a favorite when fruits are in season.
It is a type of cake like batter that taste more like a pound cake in the end.
Once you make this and you taste it... you will never forget.

1 ½ cups (210 gr.) flour
1 cup (200 gr.) sugar + 2 tablespoons
7 tablespoons (3/4 stick) (100 gr.) butter (no substitute)
3 tablespoons (50 gr.) sour cream
1 teaspoon baking powder
1 teaspoon vanilla
1 teaspoon lemon or orange grated peel
3 large eggs
500 gr. fruits (apricots, peaches, pears, cherries, plums, orange, pineapple, or any other fruit not too juicy)

Prepare fruits (pit removed and cut in not too big pieces)

Preheat oven to 350 F (180 C). Butter and dust with flour a baking pan.
Beat butter, sour cream and sugar together. Add eggs one at a time.
Add flavorings.
Add flour with baking powder and mix until everything is smooth not longer than 1 minute.
The batter should be easy falling from the bowl. If batter is too thick feel free to add 2-3 tablespoons of milk.
Should not be too thin or the fruits would go straight to the bottom.
Place batter in the pan and level nice.
Place fruits on top (don’t press). Bake for 50-60 minutes. I bake mine 50 minute. But that depends of your oven.
Let cool on a rack and sprinkle with sugar or not, and serve.

Note:
1. The round tray is large, pizza size and I double the recipe.
2. I'll say no to kiwi, they turn too sour for my taste.

Cuis,
Great recipe, thanks for sharing. Orygun is fruit country and I can't wait to try this with some fresh berries or peaches.

You know something, this recipe is what comes first in my mind when I have fruits no one wants to eat anymore.
So I combine them with few nuts and after I'm done with baking, you should see how fast it goes :)

I have a great rule in my kitchen.... NO WASTE

I hope you will like it as much as I do. Enjoy!
