We're having plain old BBQ chicken, which we haven't had in a very long time. Sides are corn on the cob for me, baked beans for Dogboa, and special macaroni salad, Muller's basic elbow mac salad recipe plus HB eggs, small steamed shrimp, and a little bit of Marzetti's dressing.
I made a cold spaghetti salad with grape tomatoes, sliced boiled eggs, chopped cucumber and onion, and some wee salad shrimp thrown in.
Put that all together after you rinse the spag in cold water, then add some Catalina dressing.
Toss and chill. It's delicious.
More today. It made a lot.
Karen made doughnuts for dinner. Andouille and sharp, white cheddar stuffed that is! Home grown collards as a side and homemade BBQ sauce for the doughnuts. Recipes are from Emeril's cookbooks.
Tonight was cheesesteak (hero roll with American cheese melted under broiler, thin sliced London broil pan fried, yellow, red and green peppers and onions pan fried).
Last night was pork tenderloins and pineapple grilled over the coals with pecan for smoke. The sweet potato on the side was slathered with homemade ghee.
The pineapples we are getting from T-Boys have been wonderful.
Tonight is stir fried chicken from the Whole30 book. It is less involved compared to the one listed on the net. I just finished the mise en place and will take a break before frying the chicken and putting it all together.
It was my first time ever doing a stir fry and it came out pretty good. It sure made a mess of the stove and counter. I learned to do a few things differently and sometimes think the people writing these feel good recipes never actually made them themselves.
I made a sandwich using an XL butter croissant with ham and Kraft's wonderful " Big Slice" smoky bacon cheddar, lettuce and mayo.

It's the Whole30 plan and so far it's been great. Tonight's paleo burgers were something I found looking for recipes that would work as I'm getting tired of chicken.
Saturday night will be salade niçoise with Westport tuna.
OK, I was out kalamata olives - went to Safeway
and they had none in their olive bar, which is a bad way to start out the long weekend. I decided to make the long drive to Met Mkt and ended up getting 3 different kinds, as long as I went all that way. Also got fresh arugula for the salad.
