Chicken with Mushrooms and Bacon

  • 4 slices bacon, diced(or more)
  • 1 frying chicken, 3 to 3 1/2 pounds, cut up
  • 8 ounces sliced mushrooms
  • 1 clove garlic, minced(or more)
  • 1 envelope Onion Soup Mix
  • 1 1/4 cups water
  • 1/2 cup dry red wine or chicken broth
  • 1/2 teaspoon dried leaf thyme, crumbled

In a Dutch oven or large, heavy saucepan, cook bacon over medium heat 3 to 5 minutes or until crisp. Remove bacon and set aside. Add chicken to bacon drippings and brown over medium heat, turning several times to brown evenly. Remove chicken; set aside. In same Dutch oven, add mushrooms and garlic; cook over medium heat, stirring frequently, for 4 minutes. Return chicken and bacon to the pot, then add soup mix blended with water, wine or broth, and thyme. Bring to a boil over high heat; reduce heat to low and simmer, covered, for 35 to 45 minutes or until chicken is done. This is good served over rice.

One question....

WHY didn't you post this YESTERDAY before I went to the store????

I have everything but the soup and it sounds perfect for tonights din din. :) Oh well... next week maybe!!!

Trish, make your own dry onion soup mix, like I do.

4 tsp. beef granules (or crush up beef buillion cubes)
8 tsp. dried onion flakes
1 tsp. onion powder
1/4 tsp. pepper

lolol! Hey, I have all that except for the onion flakes! I have real onions... can I use those instead?

I don't see why you couldn't. The dried ones get rehydrated when mixed with the liquids so they'd be like "real onions", wouldn't they? lol I would add them with the mushrooms and garlic so they soften a bit. HTH

Me tooo! Might just make this! Sounds goooood... Paul doesn't like mushrooms but... heck sometimes the cook has to be happppppy!!

oh no... he was taught to finish everything on his plate and even though he's almost 50 he still does. lololol..... I'm always in trouble for giving him toooo much dinner because HE EATS IT ALL! lololol

so I....

cooked the onions, garlic, mushrooms in the fat -removed from pan
deglazed the pan with beef broth and red wine
put everything back in and it's simmering nicely! Smells great!!!

I'll start the rice soon.

at the last minute I decided to thicken up the sauce so I added just a bit of corn starch and made gravy!

That's ok, I very seldom do either. :yum: There is always something I have to add or take out or tweak to make it taste better to me! I'm just glad that you liked it.
