Potato Salad
Ingredients
750g small new potatoes
2 sticks of celery
2 small red-skinned dessert apples
6 stems of chives
2 ½ tablespoons sunflower oil
¾ tablespoon lemon juice
½ teaspoon clear honey
Salt
Pepper
Method
1 Put the oil, lemon juice, honey, and a pinch of salt and pepper into a jar with a screw top. Shake well
2 Scrub the potatoes well and boil for 15 minutes. Drain the potatoes & cut in half. Put the potatoes in a bowl & pour the dressing over them. Leave to cool
3 Wash celery & slice into thin slices
4 Cut apples into quarters & remove cores. Cut the apples into small chunks
5 Cut chives into small pieces
6 Add apples, celery & chives to the bowl. Mix well.
