Mary's Apricot Glazed Spam and Veal Loaf

Mary’s Apricot Glazed (Spam & Veal Loaf)
Loaf Ingredients:
1- Cup Bread Crumbs)
2- Cups Sour Cream
2- Eggs ( slightly beaten)
1- Medium Onion (grated)
1- Tbs. Dry Mustard
1- tsp. Salt
¼ - tsp. Black Pepper
½- tsp. Powdered Cloves
2- Tbs. parsley flakes
1- Can of Spam ( Crumbled up as small as possible)
1- Cup Ground Veal

Glaze Ingredients:
½- Cup Apricot Jam
¼- Cup Dark Brown Sugar

Directions
In a bowl, add all above loaf ingredients, [*with the exception of the veal and spam], and mix until well blended.
Separately mix the crumbled spam, and veal together, and mix well.
Add to the mixed loaf ingredients, and mix well together.
Form mix into a loaf pan; and bake in 350*F oven for 40 to 45 minutes, then
Remove from oven; heat glaze mixture in a small sauce pan just enough to pour easier.
Pour and spread glaze mixture on top. Return Loaf to the oven, and Continue baking another 20 minutes, or until firm.
Cool slightly before cutting slices in pan.

Thanks Mama....

I had it Once when mom was living here with us in her final years.
I liked it cold like a lunchmeat with dark Mustard. It was like a lunchmeat ( Cold cuts ) similar to Dutch loaf.

It does make a small loaf...but I guess buying more than One can of Spam to use all at once wasn't frugal back then. L O L
