Barb's Pork Lettuce Wraps

Ingredients:

1-1/2 lbs. pork tenderloin
1/4 c. soy sauce
1 T. sugar
4 tsp. toasted sesame oil
1/2 c. chopped green onions
1 T. minced garlic
1 T. minced ginger
2 T. Sriracha hot chili sauce, optional
4 tsp. honey
1 T. oil
2 T. toasted sesame seeds
1-1/2 c. cooked jasmine rice
Lettuce........Boston, Bibb, Butter, Iceburg, whatever you like

Preparation:

Blend together the soy sauce, sugar, 2 tsp. of the sesame oil, green onion, garlic and ginger until the sugar is dissolved.

Slice the pork into strips and place in the marinade. Refrigerate for at least 1 hour.

Combine the Sriracha sauce, honey and remaining sesame oil and set aside.

Heat oil in saute pan and add the pork, draining some of the marinade and doing in batches. Cook thoroughly. Remove from heat and add sesame seeds. Stir to combine.

Spoon rice on lettuce leaf, add pork strips and drizzle the Sriracha mixture on top. Roll up and enjoy!!!
