Okra Side-Dish

8 ounces bacon
1 large onion, diced
3 large tomatoes, diced
4 Cups whole-kernel corn, thawed, drained or cut from cobs
1 1/2 Cups fresh okra, washed, trimmed and sliced
(or a 10-oz. package of frozen cut okra)
3/4 tsp salt
1/4 tsp pepper
1/2 tsp red pepper flakes

Fry bacon in a large, heavy saucepan until crisp.
Drain, reserving 2 tablespoons of drippings in the pan.
Heat on medium and add the onion.
Cook until tender, stirring often.
Add the tomatoes, corn, okra, salt and black pepper.
Cover and simmer 30 minutes, stirring occasionally.
Crumble the bacon over the top just before serving.

Yield: 10 servings

Since I've never had okra before, this sounds like a great recipe to start with! Pardon my stupidity but how do you trim okra? What do you cut off?

<sigh> being a nawt'her exposed to really excellent southern cooking.....

okra is one of those much maligned vegetables. it can easily "go wrong" and yeah, then it's yucky.

but if you know how to deal with it, okra is a snap and really is tasty.

first, go for small pods. 2-3 inches max length.
big stuff is not better stuff.
big pods should be avoided - just don't do it.

snip off the bottom / stem end; chunk it up into 1/2 inch pcs - like a fat green bean pod.

that's the basics for this dish - also for stuff like cornmeal breaded fried okra, etc.
