Bacon / Spinach Salad
5 cups spinach
6 slices bacon, cut in 1” pieces
2 cups sliced fresh mushrooms
1/2 cup large walnut pieces
1/4 cup pimiento strips
1 tsp. seasoned salt
1/2 tsp. tarragon
1/2 tsp. onion powder
dash pepper
3 TBL wine vinegar
1 TBL brown sugar
Remove stems from spinach, tear up the leaves and chill.
In a small skillet, cook bacon until crisp; Remove and drain on paper towel. Measure¼ cup of the bacon drippings and discard the rest.
Sauté mushrooms and walnuts lightly in drippings.
Add all remaining ingredients, stirring together until sugar is dissolved.
Pour over spinach, add bacon and toss until spinach is coated.
