Hawaiian Pot Roast (in the crock pot)

from my sister:

1/3 c cornstarch

1/3 c soy sauce

2 c firmly packed brown sugar

2 c chopped green pepper

½ tsp pwdrd ginger (or 2 tsp finely
chopped fresh)
1/3 c dried minced onion
4-5 lb roast
½ c red wine vinegar
4 oz can mushrooms or 1 c fresh

20 oz can drained pineapple chunks
sliced (reserve liquid)
1-2 pkgs dry gravy mix

Mix cornstarch, sugar, ginger, then stir in pineapple liquid. Add vinegar and soy sauce and mix well. Add pineapple, green pepper, onion.

Put some of mixture in bottom of crock pot that has been sprayed with non-stick cooking spray. Place meat on top, then pour remaining mixture over it. Put on lid. Cook on low about 8 hrs. One hr before serving add mushrooms.

Can cook in oven 325 F for 5-6 hours (cover tightly with foil). Then take off foil and bake another 45 minutes.

Remove meat. Add one pkg gravy mix to pot and thicken. Add 2nd mix if needed.

What an idea. Sounds good. The things you can cook in a Crockpot never cease to amaze me. :thumb:

THX ; I thought as much, but had to make sure............. got a four-pound chuck, but I'm not sure this would work with beef........
