Freezing Jambalaya?

Only reason I'm asking this question I'm going to make a kettle full of Jambalaya, but I'm only one person for now and my folks will not eat hot stuff so how well can this stuff freeze?

It might be a bit watery when you defrost it...Make sure you wrap it very well.

I freeze jambalayas, gumbos and other dishes with rice all the time. Works fine, as far as these old taste buds can tell.
As I've mentioned before, I use the one-pint size GLAD lidded containers, which is the perfect serving size for lunches at work, etc.

I won't be freezing the rice, I'm going to make new stuff each time and I may use corn meal instead of rice.

Not sure how you made your jambalaya...but it's supposed to be made with the rice as part of it..
