SWEET PEPPER SLAW

1 medium head green cabbage, shredded
2 bell peppers, diced (I use one red, one yellow)
Salt to taste
1 c. vinegar
1 1/2 c. sugar
2 TBL celery seed (I crush it in a mortar & pestle)

DIRECTIONS
In a large bowl, combine the cabbage and bell pepper together.
Season the mix with salt; mix again.
Set aside for about 30-40 minutes.
Drain mixture in a colander and return to the bowl.

In a small saucepan, combine the vinegar and sugar. Bring to a boil, stirring to dissolve the sugar. When mixture reaches a boil, immediately remove from heat.

Add the celery seed to the cabbage mixture, pour the vinegar mixture over the cabbage and mix thoroughly.

Place in fridge until completely chilled.
