Bam's Fried Turkey Sammie w/ Spicy Cranberry Glaze

i wanted christmas dinner one day and didnt want to go all through the procedure so this is what i came up with. Holiday tastes with a twist


1 turkey tenderloin or breast, cut into bun sized pieces
dinner rolls
toppings of your choice

Red cranberry glaze:
1/2 cup dried red cranberries
1 cup orange juice
1/2 habanero(or your favorite chile) minced finely
1/2 cup brown sugar

Combine all ingredients into a medium saucepan over medium heat.
Bring to a simmer. Reduce heat to low and reduce liquid by half.
Makes about 1 cup

for the batter:
1/4 tsp poultry seasoning
1/4 tsp habanaro powder (subsititue your favorite)
1 egg
1 cup all purpose flour
3/4 beer(room temp) drink 1/4
seasoning to taste( I usually use about 2 tsp of some kind of season all, wild game season or old bay)
1 tsp baking powder
extra flour for dredging

option #2
your favorite buttermilk pancake mix
mix with beer until it is of desired consistency

Directions:

Whisk egg, beer, flour, seasonings together until smooth. Cover and let sit 20-30 minutes.

Heat oil to 375, I use peanut oil.

Stir in baking powder to batter just before frying.

Dry turkey pieces with paper towel then dredge in flour and then in batter.

Fry until golden brown. Season with salt when the turkey comes out of the fryer.

Spoon a generous amount of the glaze on turkey, serve with more glaze on the side if needed.
