Bacon Italian pasta.

6 slices of bacon, cooked and drained of all fat, diced
1/2 cup cubed ham, cooked and diced.
3 cloves of garlic, finely chopped
1/2 onion, finely chopped
extra virgine olive oil
5 ripe tomatoes, diced or 1 can of diced tomatoes
salt and pepper to taste
red crushed pepper to taste

dry pasta of your choice

freshly grated parmigiano

In a skillet sautè onion and garlic in a sufficient amount of olive oil. When they are well cooked, add your bacon, ham and tomatoes and salt and pepper and red peper. Bring to boil and cook for several minutes until the flavours are well blended and some of the extra liquid is evaporated.
Meanwhile cook the pasta and drain
Toss the tomato mixture together with the pasta, serve with plenty of freshly grated cheese.

I should come up with another name for it really... Piggy pasta or something.. ham and bacon! lol!!

I like red pepper flakes in my pasta sauce also but never tried it with bacon. I have made it pancetta as well as prosciutto ham. I will have to give this one a try.

Bacon!!!! Don't worry, it is on my grocery list but we aren't going shopping till Friday, bummer. I'm gonna stock up on it though!
