Creole Zucchini

1 c onion, chopped
1 clove garlic, minced
3/4 c green pepper, chopped
1/4 c cooking oil
2 lb (4 med)zucchini, sliced
1 can (14.5 oz) diced tomatoes, drained
1/2 tsp salt
1/4 tsp pepper
1 (11 oz) can spicy V8 juice
1/4 c fresh parsley, chopped (can be used dried)
1/4 c Parmesan cheese, grated

Cook onion, garlic and green pepper in oil until soft. Add zucchini, tomatoes, salt, pepper and V8 juice. Cover, cook over medium heat 20 minutes or until zucchini is tender. Serve topped with parsley and Parmesan cheese.

hmmmm I like Creole, but don't care for zucchini. What a dilemma. Guess I should try it. :thumb:

You might try yellow squash.

I'll not make a guarantee on the taste though :whistling:
