Pan Seared Tofu w/Spicy Peanut Sauce

1 package firm tofu (diced, drained)
1 cup Thai Peanut Satay Sauce( i cant find the recipe i use for this one,sorry..Bam)
Fresh spinach leaves
1 cucumber (sliced into 1/4" patties)

Dice the tofu. The smaller you dice it, the better the dish will turn out. Place tofu in a bowl covered with paper towel and rest a another bowl on top. This squeezes out some liquid from the tofu. Let stand 5 minutes or until paper towel is soaked. Repeat if necessary.

Blend the tofu with the peanut sauce. Allow sauce to marinate tofu for at least 15 minutes. Leave overnight in the fridge if desired.

In a wok or medium frypan on medium-to-high heat, cook the tofu until brown and slightly crunchy. Stir frequently to minimize the chance of burning the tofu.

Arrange the spinach and cucumber on plates, and top with the cooked tofu when it is ready. Serve hot.
