Tuna Cakes With Chipotle Mayo

1 can of your favorite tuna fish, drained
1/4 cup onion, chopped
1/4 cup bell pepper, chopped
1/4 bread crumbs
1 egg
salt, pepper, Tabasco and / or your favorite seasoning, to taste
cooking spray

Mix tuna, onion, bell pepper, bread crumbs, egg and seasoning in a medium bowl until ingredients are well combined. Form the mixture into two equal sized patties.

Coat a nonstick pan with cooking spray and place over medium heat. Add patties and cook 6-7 minutes, or until golden brown. Spray the tops of the patties with a little more cooking spray before turning. Cook for about 5 more minutes or until golden brown. Serve immediately with the mayo.

The Mayo :heart:


1/4 cup mayo
1 large clove garlic, minced
lime juice (from half a lime)
1 tsp. chipotle powder
a dash of salt and pepper

Whisk all ingredients in a bowl until well combined. Store in an airtight container in the the refrigerator for up to a week.

I was just about to look for a chipotle mayo for my fajitas!


i have two recipes that i use...

**** Chipotle Mayonnaise ******
1/2 cup mayonnaise
1 chipotle pepper in adobo -- seeds removed and roughly chopped
2 teaspoons adobo sauce
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/8 teaspoon dried crushed oregano


Chipotle Mayo

1/2 cup mayonnaise (the real stuff here..lol)
2 chipotle chilies in adobo sauce
1 tablespoon adobo sauce from chipotle peppers

mix together until blended

Ok Bam, this is your fault!!
I went to the store, I'm now making $17 chicken fajitas!

I was wondering if the chiopotle and adobo would go just as well in sour cream, because that sounds good too....

:)

of course it would go in sour cream..it would suit your fajitas better anyways

I made these last night for dinner and they were delicious. Since I don't like green bell peppers I made a minor change. Instead I used an 1/8th cup roasted red bell pepper and an 1/8th cup minced Italian parsley. I served them with steamed asparagus with mustard cream sauce. It made such a pretty dish! Thanks for the recipe. :applause: It's a keeper. May try it with salmon next time.
