Spicey Lime Chicken Fajita's-low cal-hi taste

these fajitas are my missus's favorite

ingredients

1 lb chicken tenders(u can use whatever u want)
2 limes
i large onion - sliced finely
1 large green pepper - sliced finely
fat free sour cream
fat free cheddar cheese
pam
1 TBL evoo

the rub:

3/4 teaspoon salt
1/2 TBL black pepper
1/2 TBL cayenne pepper (if u dont like it hot i would omit a little bit..lol)
1/2 TBL paprika
1/2 TBL garlic powder
1/2 TBL onion powder
1/4 teaspoon dried thyme 1/4 teaspoon dried parsley (i use 1/2 TBL italian seasoning instead of the thyme and parsley)

how to:

mix all of the dry ingredients into a small bowl, set aside

cut chicken into strips and lay onto a plate - sprinkle rub onto chicken, make sure it is all coated and let sit wrapped in plastic wrap for 6 hours in the fridge. 4 hours into the chicken sitting, sqeeze the juice of 1 lime onto the chicken, put back into fridge for the remaining 2 hours

saute onions and peppers in non-stick skillet with a little pam, when tendercrisp take out of pan and put the EVOO into the pan to fry the chicken. add peppers and onions when chicken is just about done.

squeeze half of one lime when food is just about done and add about 1/4 cup of water to give a sauce

use remaining 1/2 lime to squeeze onto your fajita

you wont regret it... This is one of Mrs.Bams favs when she is on a diet..it feels like you are cheating and its unhealthy but is very good
