My boss brought one of her crockpot cookbooks into work and this is one of the recipes I copied.

Had it last night and it was EXCELLENT!!!

I used 2 poblano peppers instead of bells, and a dried guarillo pepper instead of a cayenne. I used about a pound of ham chunks (got a great half-price deal on a huge slab of ham!)

I garnished it with cilantro, cotija cheese, avocado and lime.

A keeper! :a1:

I've been looking for a chili recipe for a church contest but it was cancelled for this year. This one looks interesting and will save it for next time. These folks like odd chili recipes and not traditional.

An excellent use of leftover Easter ham.

It makes a delicious taco salad for another dinner.
