Marinated Mushrooms or Artichokes-Italian Style
Cal's marinated mushrooms or artichokes - Italian style
1/4 cup dry white wine (or white wine vinegar)
3 TBS. fresh squeezed lemon juice
8 TBS. extra virgin or light olive oil
1 tsp. minced shallot
1 tsp. minced garlic
pinch of salt
pinch of ground black pepper
1/4 tsp crushed dried oregano
2-3 cups (1 - 1 1/2 lbs) cleaned and sliced fresh button mushrooms, or
2 - 16 oz. cans of artichoke hearts, drained
Combine all marinating ingredients in a medium sauce pot & whisk together over medium-low heat.
When heated, add mushrooms or artichokes. Cook about 5 minutes on medium, stirring accasionally
to coat and heat everything.
Let cool to pour in a glass or corning container.
Cover and let cool in refridgerator for 2 hours minimum or overnight.
