Tex-Mex Mac and Cheese

Tex-Mex Mac and Cheese

3 1/2 cups macaroni, cooked and drained
1 3/4 cups low-fat sharp Cheddar cheese, shredded
1/2 cups onion, finely chopped
3 tablespoons chopped parsley
1 3/4 cups low-fat cottage cheese
1/2 cups evaporated skim milk
2 teaspoons Dijon-style mustard
1 slice bread, crumbled
3 tablespoons grated Parmesan cheese
1/2 cups salsa
1 teaspoon fajita seasoning
Salt and pepper

Preheat oven to 350 degrees F.

In a large bowl, combine cooked macaroni, cheddar cheese, onion, and parsley.

In a blender or food processor, combine cottage cheese, milk, and mustard. Process until smooth. Mix
in salsa and fajita seasoning and pour over macaroni mixture. Mix thoroughly. Add salt and pepper to taste.

Coat a 2-quart casserole dish with nonstick cooking spray and place macaroni mixture into dish. Sprinkle
breadcrumbs and Parmesan cheese over casserole. Bake for 20 minutes.

Oh, Lucky, this sounds terrific!

I have almost everything to make it, except for the fajita seasoning. That may be the one seasoning in the world I DON'T have in my cupboard, but I'm sure I'd love it.

Have to get some!

Hey Lee;
It ain't necessary to go looking................

Fajita Seasoning Mix



3 Tbsp. cornstarch
2 Tbsp. chili powder
1 Tbsp. salt
1 Tbsp. paprika
1 Tbsp. sugar
2-1/2 tsp. crushed chicken bouillon cube (you can use "Herb-ox" powder, but beware the salt content !)
1-1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp cayenne pepper
1/4 tsp. crushed red pepper flakes
1/2 tsp. cumin

Preparation:

Combine all of the ingredients in a small bowl. Pour into small glass or plastic container, seal tightly and store in a cool, dry place.

LT, I took my best guess on where to put it. Seems to be we might need a mexican food forum. Do you think that would be used?

Maybe it's time to refresh our forums and add a few forums and merge a few others. Thoughts anyone?

I for one would use it, and post to it often !
Tho' most of the "Mexican" recipes in circulation today are in reality "Tex-Mex", or "Americanized" recipes, a Mexican / Tex-Mex thread would get utilized, I'm betting.:thumb:


Only problem I can think of is that, at this late date, there are probably a good number of recipes that fit the category already imbedded in other threads.................
