Vidalia Onion Pie

1 9-inch unbaked pie shell
4 Vidalia onion, sliced thin
1 stick (1/2 cup) butter
3 eggs, slightly beaten
1 cup sour cream
1/4 teaspoon salt
1/2 teaspoon pepper
A couple of dashes of hot sauce
3/4 cup of Grated Parmesan cheese
Paprika for sprinkling on top

Preheat oven to 450 degrees F. Bake pie shell for five minutes, remove from oven and set aside.

Turn down the oven temperature to 375 degrees F.

In a medium skillet over medium heat, saute the onions in the butter until they turn a nice Carmel color (about 10 minutes).

Combine the eggs and the sour cream. Add to the onion mixture. Add the salt, pepper, hot sauce and 1/4 cup of the Parmesan cheese. Pour into the pie shell. Sprinkle the top with the remaining 1/2 cup of parmesan cheese and some paprika.

Bake for 20 minutes at 375 degrees F. Reduce the oven temperature to 325 degrees and bake until lightly golden, another 30 to 40 minutes or until lightly browned on top. Remove from the oven and cool slightly before slicing to serve.

**It's almost that time of year. As soon as the Vidalia Onions hit the shelf, I'll make the pie and take a picture.
