SEAFOOD CASSEROLE

1 lb. any combination of shrimp, lobster chunks, and crab
1 C. long grain rice
1 6-oz. can small mushrooms (sliced), drained
41/2-oz. apricot jam
1/4 C. sour cream
1-1/2 Tbsp. butter (melted)
3/4 tsp. salt
1/8 tsp. pepper
Lemon wedges & parsley for garnish

Cook rice according to package directions
Preheat oven to 350 ºF.
In well-greased 1-1/2 Qt. casserole, combine rice with seafood and remaining ingredients, except garnish. Toss to mix. Cover and bake 40 minutes. Garnish with lemon wedges and parsley.
 
Top
