Creole Shrimp on Biscuits
This is my traditional Valentine's Day breakfast offering, but don't wait for the holiday- LT

Creole Shrimp on Biscuits

1 pound of shrimp, peeled and de-veined
1 large onion, chopped
2 stalks of celery, thinly sliced
2 Tbsp. margarine
1 large can of ready-made biscuits
2 cans of cream of shrimp soup
1 cup half and half
Creole seasoning (McCormack’s)
Garlic powder to taste

In a large saucepan, heat margarine on medium heat.
Add the chopped onions and celery to the saucepan and
cook them until very soft.
Pour in soup (do not add water). Cook on low heat for about 10 minutes.

Chop shrimp; Save 2 whole shrimp (tail intact) per biscuit for presentation.
(While waiting, heat oven and cook biscuits as directed.)

Add half and half to soup and cook another 5 minutes.
When soup is done, Season to taste with Creole seasoning and garlic powder. Add chopped shrimp and cook for another 5-6 minutes.
to serve;
On individuals plates, place 2 biscuits. Arrange 2 shrimps on top of each biscuit in a Heart shape, fill the well created by the shrimps with soup mixture. puddling more around each biscuit.

I serve this beside a mushroom omelet, drizzled with the soup mixture.

This sounds really, really good. I may have to put a poached egg on top of the biscuit first. lol Thank you!

Grants, they used to sell the cr. of shrimp around here all the time and then it disappeared. I have my niece in another city pick it up for me because her stores always carry it. Go to the Campbell's site and ask where you can get it in your area. That's what I ended up doing.

I've never seen Cream of Shrimp Soup either. I may have to start looking. But, I have homemade shrimp stock on hand. I can improve and make my own CSS.
