Sweet & Sour Cabbage

I like the simplicity of this recipe. It is a favorite at our table.

1 1/2# head of red cabbage chopped or coarse shredded (which is really purple)
1 medium onion diced
1 apple peeled and diced
4 T butter
2/3 cup balsamic vinegar (use a cheap brand)
6 T brown sugar

In a Dutch oven or cook top safecasserole dish melt butter over medioum heat and add cabbage, onion and apple. Preheat oven to 275. Saute until cabbage begins to soften about 5 minutes. Add vinegar and sugar. Stir well, cover and place in oven to bake for 2 hours.

Almost the same as my mom's, except no brown sugar & she used cider vinegar.
Love it. I buy jarred and add the apples & onion.

Lots of Europeans have similar dishes.

My Polish aunts always put dill (preferably fresh) in theirs.

I love this kind of dish!
