One of these guys has been walking along my back fence lately, driving my dog nuts!

Anyone here ever eat a possum? What's it like?

technically it's an opossum. the irish american marsupial. :biggrin:

Awww - isn't it cute!! I love opossums, but unfortunately they're the most common host for a serious & frequently fatal protozoal disease (Equine Protozoal Myeloencephalitis). So if, like me, you own horses, you have to be diligent in discouraging their visits.

One site I read said that you should catch them and feed them corn for a few days...
since they are scavengers!
They also said to scare it before you kill it so the adrenaline can flavor the meat!
So a nip o the barley couldn't hurt either, LOL!

Ok I found this quite interesting. Until my Grandfather passed in 1998, my family hosted a possum supper at least once per year as far back as I can remember. We once cooked 6 for one supper. I have been a possum hunter for 58 years(actually less, have not been since my grandpa passed). Yep, we caught and caged them for 3-4 weeks and fed the nothing but cornbread and milk the whole time. Possum, Roast W/ Possum Stuffing
Stuffing Ingredients
1 Onion, large, finely chopped
1 Tbsp Fat
Possum liver (optional)
1 cup Bread crumbs
1 tsp Red peppers, chopped
Worcestershire sauce, dash
1 Egg, hardboiled, finely chop
Salt to taste
Brown onion in hot fat, add finely chopped liver. Cook until tender.
Add other ingredients plus enough water to moisten mixture. Mix,
stuff possum and skewer or sew the opening shut. Suggestions: Some
parboil the possum before roasting. Others remove the skin and fat.
Try rubbing possum with a little sage before roasting. Sweet potatoes
are absolute requirement to a Southerner.
Roast Possum
1 Possum, whole, un-cleaned
1 Onion, large, chopped
1 Tbsp Bacon fat
Possum liver
1 cup Bread crumbs
1 tsp Red pepper, chopped
Worcestershire sauce, dash
1 Egg, hardboiled, finely chop
Salt to taste
Procedure
Possums are roasted with hide on, so prepare a large pot of scalding
hot water. Dip possum in it for a few minutes, then remove the hair
by scraping with a dull knife, as you would scrape a hog. If some
hair comes off hard, dip again in scalding (not hard-boiling) water.
Wash with soap and water, then remove entrails, keeping washed liver.
Remove head and tail (some people keep the head on). Soak in cold
water to which is added 1 cup salt. Drain and rinse with boiling
water. Stuff with possum stuffing, close the opening, and roast in
black iron pot with a little water for 1-1/2 hours at 350. Baste
often. SEE possum stuffing recipe. Add sweet potatoes 1 hour before
possum is done.

OK, enough already. Those of you who follow the random pictures thread know that we rescued an abandoned baby opossum a few weeks ago. We've grown very fond of him, and while he's much too tiny to be roasted or put in a pie, he often sits on my shoulder while I read these posts, and he's very sensitive about the mere suggestion.:hide::unsure::hide2::unsure:

an opossum has been frequenting my backyard and driving the dogs nuts too... it just perches on my fence and stares.... I live in the city to avoid things like this. ARGH

The nice couple across the street had found and taken home a baby opossum while walking their dog... they asked me what it was. It was very cute but I have not had the heart to ask them what they ended up doing with it.

Thanks, LS! He is doing great, BTW - broke the 100 gram mark yesterday, and has started eating solid food. Purina is his favorite.
