CRAB BURGERS

Preparation Method
1 pound crabmeat -- backfin or special
1/2 small onion -- finely diced
1/4 green pepper -- finely diced
1 tablespoon mayonnaise
1 dash Old Bay Seasoning
8 slices mozzarella cheese
8 each hamburger rolls Cut hamburger rolls in half.

Butter each half and toast lightly in broiler. In a bowl combine crabmeat, onion, pepper, mayonnaise, and Old Bay Seasoning. Cover each of the 8 rolls thickly with crabmeat mixture, and top with a slice of cheese. Place 8 burgers on a cookie sheet and bake in a 350 degree oven, until crabmeat is heated through and cheese is melted. Remove from oven, top with other half of roll, and serve.
