Cheeseburger Pie

Another good one we like to make on occasion:

Dough:
1 cup packaged baking mix
1/4 cup cold water

Filling:
1/2 cup chopped onion
1/2 cup chopped green pepper
2tbsp butter
1/2 cup lean ground beef
1/2tsp salt
1/4tsp pepper
2tbsp packaged baking mix
1tbsp Worcestershire sauce
2 eggs
1 cup small curd creamed cottage cheese (drain excess liquid)

Topping:
2 medium tomatoes, sliced paper thin
1 cup shredded cheddar cheese

In bowl, mix 1 cup baking mix with water until soft dough forms, then beat vigorously 20 strokes. Gently smooth dough into a ball on a floured, clothe covered board. Kneed five times. Roll dough 2inch larger than an inverted 9inch deep dish pie tin. Ease onto plate, flute edge if desired.
Suate chopped onion and green pepper in butter until tender. Do not brown. Remove onion and green pepper and set aside.
Brown ground beef, drain. Remove from heat, stir in reserved onion and green pepper, salt, pepper, 2tbsp baking mix and Worcestershire sauce.
Spoon into pie crust, set aside.
Mix eggs and cottage cheese in bowl, our over beef mixture. Arrange tomato slices in circle on top, sprinkle with cheese.
Bake at 375F about 30 minutes, until set.

I have the same problem with flour, just learning the hang of it making very simple breads and stuff.
Which is why I cheated and used baking mix on this one, and crescent rolls on another one, LOL!
