I made this, omitting the croutons, and packed it into 6 ramekins. I've been taking one portion each day to work for lunch, heating it in the microwave and dumping the hot cassoulet on top of salad. Excellent and filling!
Easy Cassoulet (WW 232 calories, 5 points plus)
2 teas olive oil
1 package of turkey sausage or turkey kielbasa
2 carrots, diced
2 celery stalks, sliced
1 large leek, white and light green parts, thinly sliced
1 15 oz. can navy beans, rinsed and drained
1 15 oz. can great northern beans, rinsed and drained
1 14 oz. can no-salt diced tomatoes
1 teas. Italian seasoning (they called for Herbs de Provence, but I don't like it)
1/2 cup croutons, crushed
Preheat oven to 350. Spray 6 ramekins with non-stick spray.
Heat oil in a large skillet. Add sausages or kielbasa, carrots, celery and leek. Saute about 8 minutes.
Add beans, tomatoes, seasoning and simmer a few minutes.
Spoon mixture into ramekins and bake about 20 minutes.
