Easy Ham and Pasta Casserole

I got this recipe from my supermarket sales flyer!

Any kind of peppers, pasta, ham and vegs. would be great in it. I happened to have a 16 oz canned ham, and peppers from my garden

The key is the EASY CHEESY sauce!

My friend and I loved it - she had two helpings and I sent her home with a huge bowl of it (makes a ton).

Spicy Bowties with Ham and Edamame
16 oz canned ham, large dice (or leftover baked ham)
16 oz package frozen edamame (or your favorite frozen veg.)
2 poblano peppers, chopped (or bell pepper)
3 jalapenos, chopped
1 bunch green onions, chopped (save some for garnish) - any kind of onion
12 box bow tie pasta (farfalle)
8 oz. cream cheese or Neufchatel
1 ½ cups milk
¾ cup grated cheddar cheese
Smoked paprika

Cook bowties according to directions. During the last 5 minutes of cooking, add the edamame. Drain, but save a little cooking liquid. Place pasta and veg. in a LARGE bowl.
In the same pot, heat a little olive oil and saute the peppers and most of the green onions until soft.
Reduce heat and add in the chunked-up cream cheese and milk. Stir till smooth. Add in the shredded cheddar and stir till melted. If the sauce is too thick, add some pasta liquid. Add in the ham.
Pour the sauce over the pasta and edamame, and toss all together. Sprinkle paprika and reserved green onions on top.
It’s ready to eat right away, or keep warm in a 250 oven, covered, until ready to eat.
