RM's Fajita Steak Marinade

This is my variation on Tyler Florence's recipe

1/4 cup orange juice
3 Tbsp lime juice
1/4 cup olive oil
2-3 garlic cloves, minced
1 jalapeno, seeded and minced fine
1 tablespoon fresh cilantro, finely chopped
1 teaspoon cumin
1 teaspoon salt
2 1/4 pounds skirt or flank steak, trimmed of fat

Combine all ingredients in a large bowl. Add steak, turning over a few times until well coated. Cover the bowl and refrigerate for 3-4 hours minimum. I usually let mine marinate from overnight to 3 days max.

Slap on a hot grill, slice and serve :kiss:

I use almost the exact same Tyler Florence's recipe for both skirt, flank steak and spider/hanger steak. The only thing I do different is reduce a 1/2 cup of orange juice down to the 1/4 cup which concentrates it more. Really is a great marinate for beef or pork and perhaps chicken too.
