Broccoli Cheddar Bites

1 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. pepper
1 egg
1/2 c. milk
1 tsp. melted butter
1 cup chopped raw broccoli
1 cup shredded cheddar cheese
1/2 cup finely chopped onion

Make smooth batter with first 7 ingredients. Mix in next three ingredients. For best results refrigerate for at least 1 hour.
Drop by spoonfuls into hot oil, deep fry until brown and crispy. Sprinkle with salt.

Dipping sauce
1/2 c. mayo
2 T. horseradish
2 tsp. catsup
1/4 tsp. paprika
1/8 tsp. oregano
1 dash cayenne
salt and pepper
Mix together and refrigerate to marry the flavors.

I'd like to bring a batch to my father's house, but I wonder how good they'd be reheated in a toaster oven?

I haven't tried reheating them but I would think doing it in a toaster oven might keep the crispiness.
I've never tried it but maybe try just baking them in the oven after they've been refrigerated instead of deep frying? I know sacrilege. lol
