DIL is going out to dinner with her parents and sister for Mother's Day.
She tossed the Keto diet after I told her about some of the risks outweighing the benefits.
Think Atkins Diet lol

So I'm lunching with eldest son, got my home hospice visits this evening... no idea what's for dinner.

We had Persian inspired food. Porterhouse lamb chops marinated in a mix of cilantro, preserved lemons, garlic, s and p, and olive oil, then grilled. Side was couscous with roasted red and yellow bells, zucchini, red onions, plus more preserved lemons, black garlic, and a dressing of cilantro and olive oil, s and p of course.

Another crazy, busy day.
We just had grilled cheese and tomato soup.
Son Ty is going to eat somewhere off the Ohio turnpike, as he got called out on a tow.

It was what the butcherplace we got them from called them. We decided we prefer the lamb "lollipops."

I'm planning on making the easy lemon shrimp recipe posted in the fish and seafood forum.
Maybe rice or something as a side.
I got 2 bags of frozen raw shrimp @ Meijer.

We had Pizza that I made. The kids were over for Moms day, and for sons 49th birthday. His birthday was the 10th, but we celebrated it together with moms day!:bdaycake:

Still trying to decide pasta, rice or potato as well.
I found some cute little cukes at the store too.

Today the granddaughters are both sick.
So.... don't know what's going to go down in the kitchen.
I'm very cautious about what they eat at such times and what we prepare.
They'll more than likely have bananas, rice and toast etc.

I just got regular ones, but do know about the split tops that are good for them.
I think Pepperidge Farm are the ones I've seen.


We've got some good ham salad that will be used along with lettuce in wraps.
Leftover cuke and tomato salad too.

We got back from UT yesterday afternoon after stopping overnight in Yakima. Last night we had a bottle of Hogue Dry Resiling and cold chicken sandwiches from a chicken we roasted before we left, frozen and thawed in the microwave.

Mother's Day we spent the afternoon at hospital with Maddie. We drove separately so Matt could go this special shop in SLC on his way home for things for dinner. It was closed, of course, about everyplace is closed on Sunday in UT. Park city is secular and they pretty much stay open but now that the ski season is over a lot of places are closed - I digress. After no you in SLC he went to his local grocer which has a wonderful cheese section and bought cheese and pate for a Charcuterie Board. I bought the salumi at Met Market - it's made by Mario Batali's father. I can't even begin to tell you the names of the cheese but one of the soft cheese's was made with truffles in it and there was a several blue cheese types. The sauce was a chutney that Matt makes and is planning to bottle for sale. anyway, this was our Mother's Day meal.

Multi meat bolognese with freshly made pappardelle. A simple salad prior. It has ground beef and turkey, bacon, hot and mild Italian sausage, chicken thighs, and chicken livers. It takes 2-3 days to prepare depending on how focused I am. We get anywhere from 8-10 meals out of it.

We just did burgers tonight from the freezer.
Two different kinds, some with American, some with Colby.
They had onion rings as well.
I didn't.

i let my babbit know that she is not my natural kiddo; she meows, she put that fur/whiskers into pout-mode--she went into my kitch' to pout on--sigh-- tweens--on went my 'mom' psedo-shoes/lines they use--
--if u apply claws to my sneakers again, u may as well ferget that treats exist~~
--we chose u (she's my ex's drop-off, tho i so adore my babs)
--Mum luvs u & didn't choose 2 take u to stay w/ Gramma & Vinny & their tall, tall doggies,
then Mum got ill
--unless u tip my pop over, once again, we can avoid that--
--don't tip my food again & that i bought that as my lunch--
--babs! we don't nap on Mum's newest keyboard--
--& gimme those steaks!! that's my dinner, babs!!

For the first time in ages, we split a bone-in Chicken Breast, baked.

Plenty of meat left for hot Chicken & Gravy over Stuffing tonight...
