We'll be having a Lebanese (I think) grilled chicken with flatbreads and 3 different sauces, a tomato based sauce, a garlic based sauce, and a parsley/cilantro based sauce. The chicken got spatchcocked and had a marinade of coriander seed, a WHOLE bunch of garlic, turmeric, olive and grapeseed oils poured over and rubbed into, then covered and refrigerated since late yesterday afternoon. It's out of the Food and Wine mag May issue.

We are going to the Mariners vs LA Angels today - it will be ballpark food; maybe sushi... lol

I'll have to have garlic fries as I don't know when I'll get back and they have excellent fries at Safeco. :bbq:

You can always use a vege peeler and peel the outer skin off the thick ends. That's the 1 complaint we had about dinner last night. The asparagus were different thicknesses. The skinny ones were done perfectly, the thicker ones not so much and they were tough besides being undercooked. Had they peeled the thicker ends down, they would have all been perfect.

The thick ends should snap off quite easily.
These all appear to be uniform in size.
I am thinking boil/steam 2 minutes tops, then ice bath for serving with a vinaigrette.

If otherwise, DIL boils just a tad, then tranfers into sesame oil to brown..one method.
Much like we've done with halved Brussels sprouts.
I'll eat them either way.

Son has had the ribs grilling low, he got more sweets to make "like Meemaw did" sweet potatoes, with brown sugar/marshmallows.
He asked about the asparagus.
Told him it's however he chooses.
It's outta my hands at this point lol

Notes on the asparagus;
Son took them- nuked in a glass dish in water for about 2 minutes.
Out of the dish- patted dry, into nonstick pan w/ slightly browned butter/olive oil - tossed with tongs til browned.
Spears were still tender, heads slightly crisp.
Finished off with salt and pepper.
This will be the go-to method from now on as we loved them that way.

I cook them in between really damp sheets of paper towels, divided into 2 bunches, then placed with thicker ends on the outside edges of the paper towels and the tips more in the center, and cook in 1 minute increments until they are nearly done, then let them finish steaming in the paper towels. I dress them with a little garlic and/or lemon oil or butter.

OR

I saute or grill them after tossing with some salt and pepper and a bit of olive oil until almost done, then let them finish cooking on their own from residual heat. I do them this way when I wrap them with prosciutto. I used to dress these as above, but am using a balsamic reduction from now on.

Yesterday we went to the Mariners vs. LA Angels and saw Felix vs Iachani. The is new kid from Japan is the real deal, pitched a great game and although booed, I applauded his effort.

Nancy got some dumplings and pot stickers from the place where amelia's mother works. They have a stand at Safeco. Later I ordered garlic fries and nancy ordered a Philly Cheese steak sandwich. the sandwich was not bad but the fries were cold. We ate about 2/3 rds of them. I couldn't even finish my second beer and that's not like me. Beers were $13 each!!! After the game we took the light rail back to Angle Lake then Peter drove us to Red Robin. It was my call and it was mediocre, at best. My fish and chips were good but Nancy's hamburger was not what she ordered, tried it eat it and it was spiced with hot sauce, which they claimed it wasn't. We got the manager and he took it off the bill.

It's nuts what they charge for beer, soda or even bottled water at sporting events.
Not to mention the food.
We used to eat lunch and dinner both at races at Indy and Daytona.
Ouch! Lol

We had hot dogs with baked beans. Toppings were sauerkraut and something new to us. Nathan's Coney island chili hot dog topping - it was really good. Sorry no pictures.

All I know is it's going to be meatless for me most of the time unless we grill on weekends.

Last night was chuck roast, whipped white and red potatoes and baby bella mushroom and onion gravy cooked in the Instant Pot. Microwave steamed baby spinach.

Ali made sliced pork loin wrapped in Jack cheese and cabbage.
It was wonderful.
My cheese came out the top because it was held together with toothpicks.

Have been so busy... Tina with the church volunteering and the soup kitchen.
The baby boy ( watching him )... Great grandson Liam James...GD got full time with Home Depot....yay yay! The little guy is so good. He is smart for a 1-1/2 year old. He loves to watch us cook.

As far as Tina and I are concerned.....we are hanging in there.
Thank god she sold her uncles house down in Mays Landing, NJ.
That was a monkey on our back all winter! 3 hours drive from here. Blahhh!
