What's on your menu? We'll be having Muffin Tin Thighs and ABTs with a yet to be determined side or maybe homemade tamales. We'll decide later.

The kids and grands are going to a group birthday party/dinner on DIL side- so I'll be on my own.

So whilst browsing freezers both kitchen and basement, there is frozen chicken pieces and potatoes in the pantry.
Sounds like a plan.

Looks like muffin tin thighs and Linda's coleslaw, which is a mix of white and red cabbage, carrots, onion, green bell, and pimento peppers that has a boiling dressing of vege oil, vinegar, sugar, hot mustard, celery seed and salt poured over it, then chilled. I probably would never have made this recipe except for having the finished product first and then getting the recipe. Best thing about it is that it must be made ahead, minimum of 8 hours, and up to 2 days, and is good for up to a week.

Boneless/skinless chicken breast, w/Greek seasoning, basted with butter.
Yukon gold potato.
I'll have some ice cream or a cookie later (maybe both!).

We had BLT’s with avocado on bakery multi grain bread for lunch.
Dinner was over easy eggs with multi grain toast.

We visited India last night. Kashmiri meatballs, lamb, plus a carrot and onion salad, a roasted beet and yoghurt salad, and basmati rice. Lots of different spices used. Even the oil the meatballs were browned in had spices cooked in it first.

I'm a sucker for Tim Horton's... so that was lunch.
Pretzel turkey bacon bagel sandwich, and iced coffee.
Not sure about dinner.

No plated pics, just a quick shot from the CI wok.
Wish I'd had snow peas.

Well I know late lunch is going to be a meet with an old friend from where I used to work.
A little Mom& Pop place in a tiny town.
Dinner is anyone's guess.

Tamales with roasted poblanos, corn, onion, garlic, chihuahua cheese and a few other things. Also, Craig made chicken with a red chile sauce.

I made the masa and decided to pulverize some frozen (thawed) corn to use in the dough to give it more flavor. Worked out pretty well I think.

Mom's sammies, corned beef, ham, pickles, tomatoes, munster cheese, and 1000 island dressing as the "mayo." Normally, i make an egg wash to dip them in and sautee them in butter and oil, but I decided to make a pressed sammie with just butter brushed on both sides. Bread is a basic focaccia recipe, just made in a smaller pan so it would be a bit thicker so it could be split.

It's pretty good made in a proper size pan with olive oil drizzle and large grain salt sprinkled on right before baking.

when we have fish sometimes I trim bits and pcs off - or perhaps a chunk is a smidge too big for two . . . these I freeze and when we have a plethora - it's fish chowdah! tonight!

Tonight the mrs made a West African chicken thigh dish. It was excellent but the peppers were as hot as we'd of liked.

Change of plans here.
DIL decided to forego the Alfredo dish and simply roasted the chicken with "Rub Some Chicken" seasoning, and did a cheesy rice.
We'll do the pasta this weekend maybe.
Should have had something green with it.
