Fall Ham Spread

2 granny smith apples-peeled and sliced
¼ c brown sugar
2 T butter

½ lb baked ham
¼ c dijon mustard
¼ t ground ginger
¼ c green pepper- chopped
3 T minced onion

2 T pecans- chopped fine

Melt butter in pan.
Add brown sugar and stir til dissolved.
Add the apples, and cook over low heat.. about 5 minutes until they soften.

Put all remaining ingredients except for apples and nuts in a food processor and process until smooth.
Remove and spoon into a bowl.
Stir in the apples and pecans and spread on a crusty bread, or make wraps using large whole wheat flour tortillas.
