6 scallions
3 tbsp fresh cilantro,chopped
8 ounces canned corn
1 tsp mild chili powder
1 tbsp sweet chili sauce
1/4 cup shredded coconut
1 egg
1/3 cup cornmeal
oil, for deep frying
extra sweet chili sauce,to serve
in a large mixing bowl mix together scallions,cilantro,corn,chil powder,coconut,egg and cornmeal.cover and let stand for about 10 minutes.
heat the oil for deep frying in a large preheat wok
carefully drop by spoonfuls of the chili and cornmeal mixture into the hot oil.deep fry in batches for 4-5 minutes or until crispy and golden brown.
serve warm with the extra sweet chili sauce for dipping.
