Spinach Manicotti with Ham

I had a "buy one, get one free" deal for ham steaks, so I used one for this. Found the recipe in some magazine ("Cooking Light", maybe?) and I adapted it a bit.

This would be a terrific way to use leftover Easter ham!

Spinach Manicotti with Ham
12 manicotti shells
¼ cup butter
¼ cup flour
Salt, pepper, freshly grated nutmeg (about ¼ teas)
3 cups 2% milk
Small carton (15 oz) ricotta cheese (I used part skim)
1 pkg frozen spinach or a bag of fresh, cooked and squeezed dry
2 teas. Oregano or Italian or pizza seasoning
2 cloves garlic, minced
1 ½ cups cooked ham, small dice
½ cup Parmesan cheese

Preheat oven to 350 degrees.
Cook manicotti per directions (done, but firm). This recipe calls for 12, but I had enough filling for 8.
For filling, combine the ricotta, spinach, oregano, minced garlic, salt and pepper. Add ham and mix well.
For sauce, melt butter in a saucepan. Stir in flour, salt, pepper and nutmeg. Keep stirring. Gradually whisk in milk. Bring to boil and cook, stirring constantly (reduce heat a bit) for 5 minutes or until sauce thickens.
Stuff pasta tubes with filling.
Grease a 13 x 9 baking dish. Pour ½ cup of sauce on the bottom of the dish. Place filled manicotti in the baking dish. Pour remaining sauce over the manicotti. Sprinkle parm. Cheese on top. I sprinkled smoked paprika over all.
Bake, covered, for 30 minutes. Uncover and bake 10 minutes more or until top is golden brown.
