4 servings cooked rice
4 slices bacon, diced
1 med. onion, diced
1 green pepper, diced
2 cans (16 oz.) red kidney beans
1 can (3 1/2 oz.) tomato paste
2 tbsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper
1/2 lb. Sharp Cheddar cheese, grated
5 hot dogs sliced
Fry bacon until crisp, remove to paper towel. Cook onion and green pepper in remaining fat until soft. Add remaining ingredients. Cover and simmer 20 minutes.
Serve over the cooked rice
